Yes, Crystallization is natural and expected.
Honey is shelf stable, even once it has been opened.
Do not refrigerate raw honey, it will crystallize more quickly in cooler temperatures into larger crystals
Yes, Crystallization is natural and expected. Some people look forward to the crunch. Some prefer it in its more pourable state.
Simply put the jar in a water bath & gently warm honey
Using a pot with trivet in the bottom, place honey jar on trivet and fill with water to the height of the remaining honey crystals in the jar. Remove the lid off the honey jar (to prevent pressure build up) and gently heat until honey returns to its liquid state. Recap and store at room temp.
No trivet? Use mason jar rings or some clean pebbles or anything heat safe to keep honey jar off the bottom of the pot and prevent burning the honey or melting/cracking the container,
Yes, our bees and their hives are all located within 100 miles of the farm, with most being within 2 miles and all honey is harvested and bottled at the farm.
Honey typically cannot be certified organic in most of Florida due to the range the bees forage (3 mile radius)

Natural Honeys (seasonally available):
Wildflower is when honey is harvested when two or more major nectar producing flowers bloom during any season. We have Spring Wildflower, which may have mangrove, galberry, palmetto, plus any other local winter and/or spring flowers. Summer Wildflower is more saw palmetto, mangrove, cabbage palm and summer flowers. Fall honey is typically brazilian pepper, melaleuca, acacia and fall flowers.
Monofloral honey's occur when the bee colonies are surrounded by one type of major nectar producing plant and then harvested before the next major bloom starts. We occassionally have galberry, black mangrove, palmetto and orange blossom.
Specialty Honey:
Our raw natural honey mixed with other wonderful ingredients that are not removed before bottling. We add different hive products, herbs or fruits for different flavors and wellness support.:
Bee Bread Honey is our honey blended with pollen

Infused Honey:
Our raw natural honey mixed with other wonderful ingredients that are in the honey for 4-6 weeks and then strained out before bottling. We add different hive products, herbs or fruits for different flavors and wellness support:

Creamed Honey:
Our raw honey is creamed in a special machine that mixes the honey on and off to form very delicate and fine crystals. We add different hive products, herbs or fruits for different flavors and wellness support.
Creamed honey must be refrigerated in Florida to remain in it's creamed state; if you leave it at room temperature, it may separate into layers and not return to its original consistency of very fine crystals with a delicate taste.
